Toast the nuts, being careful not to mix them if toasting them on the same sheet. Allow them to cool.
Grate the apple on the large holes of a hand grater. Add 3 tablespoons of wine, cinnamon, ginger, nutmeg, cardamom, and dates.
Combine the pecans with the sugar in a food processor. Process until fine. Stir ground nuts into the apple mixture. Mix in the almonds and pear chunks. Taste and add more wine if necessary. Serve cold or at room temperature.
