Pumpkin Spice Date Shake

Last year, we fell head over heels in love with the Palm Springs Date Milk Shake. We love its light, refreshing texture and amazing salty-sweet balance. It’s full of ginger and cinnamon, a spiciness that makes it feel grown up and sophisticated.

See, we’re still thinking about it, which is why we decided to make a new version for fall. Behold the Pumpkin Spice Date Shake! It’s earthy and nutty — and full of that warm pumpkin spice we all not-so-secretly love. As one of our tasters said, “It’s like super cold pumpkin pie you can drink.” You’re welcome.

Pumpkin Spice Date Shake

Ingredients

½ cup pitted Medjool dates
½ cup toasted walnuts, plus more for garnish
6 Tbsp pumpkin purée
¼ tsp pumpkin pie spice, plus more for garnish
¼ tsp vanilla extract
Kosher salt
1 ½ cups vanilla ice cream
¾ cup ice
Whipped cream, for garnish

Directions

  1. Place the dates in a medium bowl and cover with ½ cup hot water. Let soak for 10 minutes.

  2. In a blender, combine the dates and their soaking liquid, the toasted walnuts, pumpkin purée, pumpkin pie spice, vanilla, and a pinch of salt. Blend until a coarse paste forms.

  3. Add the ice cream and the ice and blend until smooth.

  4. Divide the shake between 2 milkshake glasses and top with whipped cream, crushed walnuts, and a sprinkle of pumpkin pie spice. Enjoy!
