Preheat the oven to 350 F. Spray a cookie sheet with olive oil spray. Gently wash and scrub sweet potatoes. Slice them into 1/4 inch thick rounds, leaving the skin intact. Place them in a single layer on baking sheet and spray with olive oil spray. Bake for about 45 minutes, or until they are tender.
