5-step Breakfast Quesadillas


Itching to try that TikTok quesadilla-folding hack? Have a go with this breakfast version! With avocado, bacon, peppers, eggs, fresh herbs, and heaps of cheese, it’s so satisfying and full of texture — an A+ way to start the day.

Here’s the recipe:

  1. In a large bowl, whisk together 6 large eggs and 2 Tbsp half-and-half. Season with kosher salt and black pepper. Set aside.

  2. In a large skillet, heat 2 Tbsp unsalted butter over medium-high heat. Add 1 diced medium yellow onion, 1 seeded, diced small red bell pepper, and 1 seeded, diced jalapeño. Cook until softened, stirring frequently, about 4 minutes. Reduce the heat to medium, and add the egg mixture, stirring continuously, until the eggs are cooked through, about 5 minutes. Set aside.

  3. In a medium bowl, combine 1 cup grated sharp cheddar cheese and 1 cup grated Monterey Jack cheese.

  4. Cut halfway into 4 extra-large flour tortillas from the bottom to the middle. Over the top of 1 tortilla, sprinkle ½ cup of the cheese mixture. Then, to the left of the cut, add 3 half-strips of cooked bacon to the bottom left quadrant; slices from ½ avocado to the top left quadrant; ¼ egg mixture to the top right quadrant; and 1 tsp each chopped cilantro and sliced green onions to the bottom right quadrant. Fold the quesadilla, bringing the bottom left quadrant of bacon up to cover the avocado quadrant. Continue folding clockwise, over the egg section, and finally, over the herbs. Repeat with the remaining tortillas.

  5. In a large skillet over medium-low heat, melt 3 Tbsp unsalted butter. Place the quesadillas carefully in the pan with the open flap on the bottom. Cook until the quesadillas are golden brown, about 5 minutes, flipping halfway through. Serve hot with sour cream and your favorite salsa.
