5-Step Snack Mix
It’s late in the game day, and tensions are high: time for a snack! We make this chocolaty recipe with Gelson’s mixed nuts, dark chocolate chips, and Himalayan pink sea salt. It’s super easy. Rather than temper the chocolate, we melt it in the microwave with a little coconut oil — it’s so silky-smooth and delicious. All you have to do is drizzle it over the nuts, sprinkle on a little salt, and then slide the whole fandango in the fridge to cool. Voilà, chocolate-covered nuts for the sport-lover’s soul!
Here’s the recipe:
Line a baking sheet with parchment paper. Spread 2 cups of Gelson’s roasted and salted mixed nuts on the baking sheet in one even layer.
In a small, microwave-safe bowl, combine ½ cup dark chocolate chips and 1 Tbsp coconut oil. Microwave for 1 minute, stir, and then repeat, microwaving for 15-second intervals, until the chocolate and coconut oil are evenly combined and smooth.
In a thin stream, drizzle all of the chocolate over the nuts, creating a pattern of streaks in all directions.
While the chocolate is still soft, sprinkle the nuts lightly with Himalayan pink sea salt. Transfer the sheet pan to the refrigerator for 30 minutes and allow the chocolate to set.
Using a spatula, break the chocolate and nuts into clusters and serve.
