Grilled Bananas with Miso Caramel Sauce

Serves: 4

Ingredients

¼ cup packed brown sugar
3 Tbsp unsalted butter
1 heaping Tbsp crème fraîche
1 Tbsp white miso
¼ tsp ground cardamom
Coconut oil, for greasing
4 medium, green or just-ripe bananas, halved lengthwise with peel on
¼ cup macadamia nuts, toasted and roughly chopped, for garnish
Vanilla ice cream, for serving

Directions

  1. To make the miso caramel sauce: In a small saucepan over medium heat, combine the brown sugar, butter, crème fraîche, white miso, and cardamom. Cook, whisking occasionally, until the butter is melted and the color has darkened, about 5 minutes. Cover and set aside in a warm place.
  2. To grill the bananas: Heat a grill or grill pan over medium heat and brush the grates with coconut oil. Place the bananas on the grill, cut sides down. Cook until the bananas have softened slightly and dark grill marks appear, 3 to 5 minutes. Flip the bananas and brush lightly with caramel sauce. Grill for 4 minutes.
  3. Serve the bananas with vanilla ice cream. Drizzle with more caramel sauce and garnish with the macadamia nuts. Serve immediately.
