Halibut With Apricot Avocado Salsa



Halibut With Apricot Avocado Salsa

Serves: 4


2 apricots diced about 1 cup
1/2 medium red onion minced
1 red jalapeo pepper seeded and minced
1 small clove Melissas organic garlic minced
1/4 cup fresh cilantro leaves minced
1/2 large or 1 small avocado diced
2 tablespoons fresh lime juice
1/4 teaspoon salt
4 4 ounce halibut filets
olive oil spray or 2 teaspoons olive oil
1 1/2 tablespoons Spice Hunter Jamaican jerk seasoning blend
1 lime quartered


Combine the apricots, onion, jalapeo, garlic, cilantro, avocado, lime juice, and salt in a small glass bowl. Cover and chill while you prepare the rest of your meal.

Preheat the broiler. Spray broiler pan with olive oil spray. Spray halibut with olive oil spray or brush on olive oil and season with jerk seasoning, turn, oil and season other side. Broil for 3 1/2 minutes on each side. Top halibut with salsa and serve with lime wedges.
