Mixed Berry And Almond Oatmeal

Serves: 4


2 cups Westsoy organic unsweetened vanilla soy milk plus more for re heating
2 cups water
1/8 teaspoon kosher salt
1 cup Bobs Red Mill steel cut oats
1 teaspoon Spice Islands vanilla extract
2 teaspoons Wholesome Sweeteners organic raw blue agave nectar
1 teaspoons ground cinnamon
1/4 cup Newmans Own Organics dried organic berry blend
4 tablespoons Flanigan Farms slivered almonds divided into 4 portions
1 5 1/2 ounce package blackberries divided into 4 portions
1 organic Fuji apple diced divided into 4 portions


Combine the soy milk, water and salt in a large, deep saucepan and bring to a foamy boil. Slowly stir in the oats, reduce heat to low, cover and cook 15 minutes, stirring occasionally. Stir in the vanilla, agave nectar, cinnamon and dried fruit, cover and cook 15 to 20 more minutes until oats are tender and most of the liquid is absorbed. Add almonds and fresh fruit to the portion you are going to eat immediately and store the rest of the oatmeal in the refrigerator. To reheat, add almonds, fresh fruit and a little more soy milk and heat in the microwave or on the stove.
