Muesli Snack Bars

4 cups Bobs Red Mill old country style muesli
1 cup Jo San unsalted soy nuts 3 ounces
1/4 cup Flanigan Farms whole raw almonds
1/3 cup Melissas organic dried blueberries
2 egg whites
1/2 cup Kettle almond butter mixed well
1/4 cup Wholesome Sweeteners organic raw blue agave nectar or honey
2 teaspoons Napa Valley organic olive oil
1/2 cup Santa Cruz Organic original applesauce
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
1/4 teaspoon kosher salt

Directions

Place a long strip of aluminum foil, non stick side facing up, in the bottom of a 9x13 inch baking pan and wrap ends of foil under the pan you will use it to lift the uncut bars out of the pan later. Preheat the oven to 325 Fahrenheit.

Combine muesli, soy nuts, almonds, blueberries and egg whites in a large bowl. Mix well to combine.

In a small saucepan over medium low heat, stir together almond butter, honey and olive oil until it begins to thin and stick together, about one and a half minutes. Remove from heat and stir in applesauce, vanilla, cinnamon and salt. Add it to the dry ingredients and mix to incorporate all of the ingredients.

Press the mixture very firmly and evenly into the baking pan. Bake for 28 to 33 minutes, until edges are brown. Allow to cool.

Hold the edges of the aluminum foil and lift uncut bars onto a flat surface such as a cutting board. Use a large, heavy knife to cut into 24 pieces seven cuts by two cuts. Place in individual snack bags or a plastic storage container in the refrigerator or freezer.
