Overnight Breakfast Yogurt

Serves: 1


1/3 cup Earthbound Farm organic frozen blueberries
1 container Wallaby organic 0 plain Greek yogurt
2 1/2 teaspoons Nutiva organic chia seeds
8 Gelson’s Finest Chandler walnuts halved
1/4 cup Marcona almonds from the gourmet cheese department
1/2 small organic Fuji apple diced
1/4 teaspoon ground cinnamon
1 to 2 tablespoons Kind cinnamon oat granola optional


1.Place frozen fruit in a large microwave safe cereal bowl or glass storage bowl. Heat about 30 seconds, until just defrosted. Mash blueberries with the back of a spoon to extract additional juice. Stir in yogurt to evenly distribute juice and pieces throughout. Stir in chia seeds. Cover with plastic wrap or a lid and refrigerate overnight.

When ready to eat, stir in walnuts, almonds, and apple. Sprinkle with cinnamon. Top with granola, if desired.
