Peach and Heirloom Tomato Toast with Burrata

Serves: 4


4 slices Food for Life Ezekiel bread orange bag toasted
1 8 ounce ball Di Stefano Burrata cheese quartered
1 large ripe heirloom tomato preferably purple or red sliced into 81/4 inch thick slices
1 large ripe peach preferably organic sliced into 161/4 inch thick wedges
1/4 teaspoon Le Saunier de Camargue fleur de sel sea salt
8 fresh mint leaves slivered
2 teaspoons Napa Valley organic olive oil
teaspoons Fini balsamic reduction


Spread two ounces of Burrata cheese over each slice of warm toast. Layer on two slices of tomato and four slices of peach. Sprinkle each piece with a pinch of salt. Top each with about two slivered mint leaves, and 1/2 teaspoon each of olive oil and balsamic glaze. Enjoy immediately with a knife and fork.
