Pinkglow Pineapple Daiquiri

Pinkglow pineapple has such a lovely flavor: mild, sweet-tart, and juicy. We like to whirl it up and strain it to make a very, very smooth juice for all sorts of cocktails — but it makes an especially sophisticated daiquiri. The pink pineapple’s light sweetness doesn’t overwhelm the subtle nuances of the white rum, lime juice, and simple syrup, so the sip is perfectly balanced. And it gives the drink an elegant-yet-playful light pink hue.

This recipe yields a lot of juice, so you can have Pinkglow pineapple daiquiris for every social event on your calendar. Hosting a wedding shower? It makes a glamorous signature cocktail. Planning a Mother’s Day brunch? It’s exactly the right amount of fruity and fancy. Having a spontaneous happy hour? It’s as easy to shake up as it is fun to drink. (Because, you know, pink pineapple!)

Pinkglow Pineapple Daiquiri

Serves: 1

Ingredients

1 Pinkglow pineapple
Ice
2 oz white rum
½ oz freshly squeezed lime juice
½ oz simple syrup
1 lime slice, for garnish
Special equipment: 1-quart mason jar and cheesecloth

Directions

  1. Chill 1 coupe glass in the freezer for 30 minutes.

  2. Cut the top and the bottom off the Pinkglow pineapple and discard them. Cut a 1 ½”-thick round off the pineapple then cut the round into 8 equal triangles. Place the triangles in an airtight container and store them in the refrigerator until ready to use.

  3. Peel and core the rest of the pineapple, and roughly chop it into 2” pieces.

  4. Transfer the pieces to a blender and blend on medium speed for 30 seconds or until the pineapple is completely puréed and smooth.

  5. Line a fine-mesh strainer with two layers of cheesecloth and place it over the mason jar. Strain the pineapple juice into the jar, using a spoon to help press the juice through the strainer.

  6. Seal the jar and discard the pulp. Note: fresh pineapple juice will keep in the refrigerator for up to 7 days.

  7. To make one cocktail: Fill a cocktail shaker halfway with ice. Add the rum, 1 oz Pinkglow pineapple juice, the lime juice, and simple syrup. Shake vigorously for 20 seconds.

  8. Strain the cocktail into the chilled coupe glass. Garnish with 1 pink pineapple wedge and the lime slice. Enjoy!
