Heat soy milk in a small pot over medium high heat until little bubbles form on the surface. Stir in oats, blueberries and salt. Lower heat to medium low and cook, stirring occasionally until the oats are tender and most of the liquid is absorbed, about 8 to 10 minutes.
Remove from heat and stir in cinnamon, nutmeg, and brown sugar. Place 2/3 cup oatmeal in each bowl and top with four teaspoons of toasted walnuts.
