Quick and Easy Veggie Pizza

Serves: 4


1 Boboli thin crust pizza shell
1/2 cup Classico di Napoli Tomato Basil pasta
sauce or other tomato sauce
2 large white mushrooms sliced
1/2 onion sliced
1/2 cup cooked broccoli cut into tiny florets
1/2 zucchini thinly sliced into circles
8 asparagus spears cooked and cut into bite
sized pieces
8 cherry tomatoes cut into quarters
1/2 cup black beans or other beans
1/2 cup Gelsons Finest low moisture
part skimmed shredded Mozzarella cheese
2 tablespoons shredded Reggiano Parmesan
cheese optional


Preheat the oven to 450 F. Place pizza shell on a baking sheet. Evenly spread the tomato sauce on the shell, leaving 1/2 to 1 inch around the edge for a crust. Layer on the vegetables and beans. Sprinkle the cheeses evenly over the top and bake 8 to 10 minutes until the cheese is melted. Cut into 4 pieces with a pizza cutter and serve.
