Sauteed Mixed Mushrooms

Serves: 3


3 tablespoons Kikkoman light soy sauce
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon sugar
1/8 teaspoon Pepper
2 cloves Melissas organic garlic crushed in a garlic press
1/2 pound shiitake mushrooms stems removed
1/2 pound oyster mushrooms 2 packages divided into bunches about the size of each shiitake
2 packages enoki mushrooms bottoms trimmed divided into nickel sized bunches
1 tablespoon canola oil


Whisk together the soy sauce, lemon juice, lemon zest, sugar, pepper, and garlic, set aside.

Heat a wok or skillet over medium high heat with canola oil. Add in shiitake mushrooms. Cook, stirring for 1 minute. Add the oyster mushrooms and cook 1 more minute. Add the enoki mushrooms, cook 2 more minutes and pour in the sauce. Toss well and remove from heat. Remove mushrooms with a slotted spoon and serve.
