Smoked Trout Rillettes

Serves: 4

Ingredients

10 oz smoked trout
⅓ cup crème fraîche
1 tsp Dijon mustard
1 tsp finely chopped Gelson’s organic fresh chives
1 tsp finely chopped Gelson’s organic fresh dill
Zest from 1 lemon
Juice from 1 lemon
Flake salt, to taste
Freshly ground Gelson’s black pepper, to taste
Rye crackers, for serving
Halved radishes, for serving
Celery sticks, for serving

Directions

  1. Gently flake the trout into a medium bowl, discarding any bones and skin.

  2. Add the crème fraîche, mustard, chives, dill, lemon zest, lemon juice, and stir to combine. Season with flake salt and black pepper.

  3. Transfer the rillettes to a bowl and serve with rye crackers, radishes, and celery sticks. Leftover rillettes can be stored in an airtight container in the refrigerator for up to 2 days.
