Spinach, Chicken, and Raspberry Salad



Spinach, Chicken, and Raspberry Salad

Serves: 4


2 teaspoons orange zest from an organic orange
2 tablespoons juice from an organic orange
1 1/2 tablespoons fresh lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
4 teaspoons Napa Valley organic olive oil
2 5 1/4 ounce bags Ready Pac organic Florentine blend spinach
1 pound Gelsons Finest rotisserie lemon and herb chicken skin removed meat shredded
4 green onions thinly sliced
1 cup fresh cilantro leaves chopped lightly packed
1 small avocado diced
1 package fresh raspberries
1/4 cup Flanigan Farms blanched hazelnuts toasted and chopped


In a small cup, whisk together the orange zest, orange juice, lime juice, salt, pepper, and olive oil. Set aside.

In a large salad bowl, combine spinach, chicken, green onions, cilantro, avocado, raspberries, and hazelnuts. Whisk the dressing and toss with the salad before serving.
