Tilapia Tacos with Apple Salsa

Tilapia is a great choice for this taco because it has a nice, mild flavor that lends itself well to the spice rub and garlic. It cooks up firm and tender, perfectly complementing the taco’s chewy, creamy, and crunchy textures. And yet, despite the fish being so tasty, it’s the apple salsa — honey sweet and just slightly spicy — that always steals the show at our family dinners!

Our tip: Make an extra batch of the apple salsa. It makes a fantastic chip dip, and you can spoon it over a pork tenderloin, a slice of turkey, an avocado, or a baked squash.

Tilapia Tacos with Apple Salsa

Serves: 4

Ingredients

¼ tsp chili powder
¼ tsp cumin
⅛ tsp paprika
¼ tsp onion powder
¼ tsp dried oregano
2 garlic cloves, minced
¼ tsp salt
1 Tbsp vegetable oil
4 tilapia fillets
Tortillas
Apple Salsa ingredients:
1 SweeTango apple, diced
1 jalapeño, seeded and diced
½ lime, juiced
½ red onion, diced
½ cup cilantro, chopped
Salt

Directions

Tilapia Tacos Directions:

  1. Dredge the tilapia in seasoning.
  2. Heat oil over medium-high heat and cook for 2 – 3 minutes a side.
  3. Cut tilapia into thin slices, working against the grain.
  4. Serve in tortillas with shredded cabbage, avocado, apple salsa (see recipe below), and lime wedges.

Apple Salsa Directions:

  1. Combine all ingredients in a medium bowl, cover, and store in the refrigerator.
