Tomato Syrup
Serves: 4
Ingredients
5 medium vine-on tomatoes, quartered
2 cups granulated sugar
1 cup packed fresh basil leaves
4 bay leaves
Directions
- In a blender, puree the tomatoes on high speed until smooth, about 3 minutes. This will yield approximately 2 cups of tomato puree.
- In a medium saucepan, combine the tomato puree, sugar, basil, and bay leaves. Bring to a simmer, stirring frequently until the sugar is dissolved, 3 to 4 minutes.
- Strain the syrup through a fine-mesh sieve into a heatproof container. Transfer to the refrigerator and let it cool completely before using, which takes about 1 hour. The syrup will keep in an airtight container in the refrigerator for up to 7 days
