5-Step Strawberries & Cream Overnight Oats

Rise and shine! This recipe for Strawberries & Cream Overnight Oats just might be your new go-to summer breakfast. If the mere mention of overnight oats makes you think of all things bland and gummy, fear not! This mixture turns out light, creamy, and vanilla-y with just the right amount of chewiness from the oats. A squeeze of honey adds a nice touch of sweetness. The whole thing tastes healthy and fresh, but also a little bit like a treat.

Plus, this recipe is really simple to make — throw it together before you go to bed, and your oats will be ready when you wake up. Grab it on the way out the door, or enjoy it on the front porch in your robe with a cup of coffee. Our tips: Don’t just stick to strawberries! You can use any fresh fruit you have on hand, like raspberries or peaches. Or, you can add fun toppings when you pull it out of the fridge in the morning, like granola or slivered almonds. Yum!

Here’s the recipe:

  1. In a large bowl, combine 2 cups old-fashioned oats, 2 Tbsp chia seeds, 1 Tbsp honey, and 3 cups vanilla almond milk. Using a rubber spatula, mix until fully combined.

  2. Transfer the oats to a 1-qt container with an airtight lid and secure the lid.

  3. Chill in the refrigerator for at least 8 hours or overnight. The oats should be creamy.

  4. To serve, place 1 cup of oats in a small bowl and top with ½ cup quartered strawberries. Enjoy!

  5. Overnight oats can be stored in the fridge for up to 3 days.
