Ingredients

For the copycat sauce:

¼ cup mayonnaise
¼ cup yellow mustard
¼ cup ketchup
2 Tbsp sweet pickle relish
1 Tbsp Worcestershire sauce

For the onions and fries:

1 tsp vegetable oil, plus more for deep frying
1 large yellow onion, small diced
Kosher salt, to taste
5 large russet potatoes, peeled and cut into ¼-inch thick matchsticks
3 slices of American cheese

Directions

  1. To make the sauce: In a small bowl, combine the mayonnaise, mustard, ketchup, relish, and Worcestershire sauce. Stir to combine. Set aside.
  2. To make the onions: Heat a large skillet over medium heat. Add the 1 tsp vegetable oil and the onions. Cook, stirring often, until the onions are golden brown and caramelized, about 20 minutes. Add 2 tablespoons of water and cook until completely evaporated, 3 minutes. Season the onions with salt and transfer to a small bowl. Reserve at room temperature.
  3. To make the fries: Heat the broiler to low. Fill a large dutch oven fitted with a deep-fry thermometer halfway with vegetable oil. Heat to 325º and adjust the heat as needed to maintain this temperature throughout the cooking process.
  4. Working in batches if necessary, fry the potatoes, stirring occasionally, until crispy and lightly browned, 5 to 8 minutes. Using a large slotted spoon or tongs, lift the fries out of the oil and allow the oil to drain off. Transfer the fries to a sheet pan. Spread the fries into an even layer and season with salt.
  5. Top the fries with the American cheese and broil until the cheese is just melted, about 4 minutes. Remove the fries from the oven and transfer to a serving bowl.
  6. Top the fries with the sauce and caramelized onions. Serve warm.
