Make Mom Happy California Grown Salad

This is an easy, customizable salad kids can make for moms on Mother’s Day or any day when they want to show mom some love.

What makes a great salad? Think of the four Cs: crunchy, crispy, creamy, colorful ingredients. In this recipe featuring a variety of California Grown ingredients, the tree nuts provide crunch, the leafy greens provide crispy textures, the avocado and dressing offer creaminess, and the citrus brings bright color.

Make Mom Happy California Grown Salad

Serves: 4

Prep Time: 10 Minutes

For the Dressing

4 TBSP California Extra Virgin Olive Oil
2 TBSP juice from a California lemon
1 TBSP California honey
1/8 tsp salt

For the Salad

6 cups California leafy greens like baby spinach or spring mix
1 cup Ojai Pixies tangerine segments
½ cup California nuts like slivered almonds or chopped pistachios or walnuts
¼ cup California red onion, thinly sliced
1 California avocado, diced

Directions

Make the Dressing

  1. Combine the olive oil, lemon juice, honey, and salt in a glass jar with a lid.
  2. Shake vigorously for 5 to 10 seconds. Set aside.

Make the Salad

  1. Place the leafy greens, tangerines, tree nuts, and red onion in a large salad bowl or
  2. mixing bowl. Add the dressing and toss well to combine.
  3. Top the salad with diced avocado and serve family-style. You can also divide the salad among four plates, then top each with avocado and serve.

Tips:

• If you use the same measuring spoon you used for olive oil to measure the honey, the honey will slip right out of the measuring spoon.

• If you want to reduce the pungency of the red onions, you can soak the sliced onions in cold water for 10 minutes. Drain the water and then add the onions to the salad.

• You can crush pistachios and walnuts instead of chopping them by placing the nuts in a zip-top plastic bag. Use a meat tenderizer or rolling pin to break apart or gently crush the nuts.
