Melon Cooler

Serves: 6

Ingredients

4 cups roughly chopped honeydew melon, seeds removed
2 cups roughly chopped Persian cucumbers, plus more (sliced) for garnish
2 cups coconut water
⅓ cup freshly squeezed lime juice
1 Tbsp lime zest
¼ cup fresh mint leaves, plus more for garnish
Pinch kosher salt
Ice

Directions

  1. In a blender, combine the honeydew, cucumber, coconut water, lime juice, lime zest, mint leaves, and salt. Blend until smooth for 2 to 4 minutes.
  2. Strain the melon cooler through a fine-mesh sieve into a serving pitcher. Serve the melon cooler over glasses filled with ice. Garnish with cucumber slices and mint leaves. Enjoy!
