Organic Split Pea Soup

Serves: 9

Ingredients

2 tablespoons Napa Valley organic olive oil
2 cups finely diced organic onions
2 cups diced organic carrots
2 cloves Melissa’s organic garlic minced

Directions

3 cups water

3 cups Imagine organic low sodium vegetable broth, plus more for thinning

2 bay leaves

1 cup Earthbound Farm Organic frozen peas, defrosted

1/2 teaspoon Le Saunier de Camargue fleur de sel sea salt

1/4 teaspoon black pepper, or to taste

1.Heat olive oil over medium heat in a large soup pot. Add onions and carrots and cook until onions begin to turn clear, about ten minutes. Add garlic and cook one minute. Add split peas, water, broth, and bay leaves. Turn heat to high and bring to a boil. Cover and simmer over low heat about 90 minutes, until peas disintegrate and soup is thick. Remove bay leaves. Taste and season with salt and pepper. Add in additional broth to thin soup, if desired. Stir in peas and cook three more minutes, until peas are heated through.
