Strawberry FroYo Bites

Strawberry FroYo Bites
Serves: 50
For the chocolate almond base:
1 ½ cups slivered almonds
¼ cup cacao nibs
7 pitted dates
½ tsp vanilla extract
¼ tsp kosher salt
For the strawberry yogurt filling:
1 ½ cups greek yogurt
½ cup mascarpone
1 lb fresh strawberries, hulled
3 Tbsp honey
1 tsp vanilla extract
Directions
- Line two 24-cup mini muffin pans with paper liners. In a food processor, combine the almonds, cacao nibs, dates, vanilla extract, and salt. Pulse until finely ground and the mixture resembles coarse sand, about 1 minute.
- Place 1 ½ teaspoons of the chocolate almond base into each muffin cup and press to form an even layer.
- Wipe out the bowl of the food processor, then add the yogurt, mascarpone, strawberries, honey, and vanilla extract. Blend until smooth, about 1 minute.
- Divide the strawberry yogurt filling between the mini muffin cups, filling each just below the top. Freeze for a minimum of 4 hours or preferably overnight.
- Transfer the frozen bites to a resealable bag and store in the freezer for up to one month. Let thaw slightly before enjoying.
