Tasmanian Cherry Pie Filling

Ingredients

4 cups Fresh Tasmanian Cherries - pitted
1 cup Granulated Sugar
1/4 cup Corn Starch
1 Melissa's Seedless Lemon

Directions

In a pot over medium heat, add the pitted cherries, cover and cook, stirring often, for 15 minutes. In a bowl, whisk together the sugar and corn starch. Stir mixture into the cherries and cook for about 2 minutes, until thickened. Stir in the lemon juice, remove from the heat, and let cool. Makes about 2 cups.
