Tasmanian Cherry Winter Salad

Serves: 4

Prep Time: 15

Ingredients

Salad

2 cups fresh Tasmanian cherries, pitted and halved
4 cups mixed winter greens (arugula, kale, or spinach)
1 cup thinly sliced fennel bulb
1 cup segmented citrus (such as blood oranges or mandarins)
1/2 cup crumbled goat cheese or blue cheese
1/3 cup toasted walnuts or pecans
1/4 cup thinly sliced red onion

Dressing

3 tbsp olive oil
2 tbsp fresh orange juice
1 tbsp balsamic vinegar
1 tsp Dijon mustard
1 tsp honey
Salt and freshly ground black pepper, to taste

Garnish

Microgreens (optional)
Fresh mint leaves

Directions

  1. In a small bowl or jar, whisk together olive oil, orange juice, balsamic vinegar, Dijon mustard, and honey. Season with salt and freshly ground black pepper to taste. Set aside.
  2. In a large serving bowl, combine the winter greens, fennel, and red onion. Add the Tasmanian cherries, citrus segments, and toasted walnuts. Toss gently to distribute the ingredients.
  3. Sprinkle crumbled goat cheese or blue cheese over the salad. Garnish with microgreens and fresh mint leaves for an extra pop of flavor and color.
  4. Drizzle the dressing over the salad just before serving, tossing lightly to coat all the ingredients evenly. Serve immediately.

Pro Tips:

  • Make it a Meal: Add grilled chicken, shrimp, or quinoa for a more substantial dish.
  • Swap the Greens: Use frisée or radicchio for a slightly bitter contrast to the sweetness of the cherries and citrus.
  • Add More Texture: Sprinkle pomegranate seeds or crispy shallots for extra crunch and color.
