5-step Cheeseburger Slider

At first glance, these look like your everyday sliders. But hidden in the center of that patty is both a compound butter made with funky Roquefort cheese and caramelized onion jam. We love these sliders as a somewhat elevated game-day snack. (They’re fancy, but not TOO fancy.) Our tip: Don’t skip chilling the Roquefort butter in the fridge! It’s easier to pack the beef when it’s firm, which helps ensure all that goodness doesn’t just ooze out when you grill the patties.⁠

5-step Cheeseburger Slider

Serves: 9

Roquefort Butter

3 oz Roquefort cheese, softened
4 Tbsp unsalted butter, softened

Burger Patties

1 ½ lb 80/20 ground beef
⅓ cup panko breadcrumbs
1 Tbsp Worcestershire sauce
1 Tbsp milk
1 ½ tsp kosher salt
1 tsp garlic powder
¾ tsp freshly ground black pepper
½ tsp onion powder
1 large egg

Filling

9 tsp Divina caramelized onion jam

For Assembly

9 slider buns
9 slices tomato
9 slices white onion

Directions

1. In a small bowl, blend 3 oz softened Roquefort cheese with 4 Tbsp softened unsalted butter. Scrape the Roquefort butter into plastic wrap and roll it into a 5” cylinder. Refrigerate until firm, about 1 hour. Slice the Roquefort butter into 9 pieces.⁠

2. In a large bowl, mix 1 ½ lb 80/20 ground beef, ⅓ cup panko breadcrumbs, 1 Tbsp Worcestershire sauce, 1 Tbsp milk, 1 ½ tsp kosher salt, 1 tsp garlic powder, ¾ tsp freshly ground black pepper, ½ tsp onion powder, and 1 egg until thoroughly combined.⁠

3. Gently shape the seasoned beef into 9 3-oz patties. Using your thumb, make a depression in the center of each patty and fill it with 1 piece of Roquefort butter and 1 tsp Divina caramelized onion jam. Fold the meat over the top to completely encase the Roquefort butter and jam, and gently pat the burger into a plump, round patty.⁠

4. Heat a grill or grill pan to medium-high heat. Grill the patties until browned and cooked through, about 6 minutes per side. Transfer to a cutting board and rest for 2 minutes. On the grill, toast 9 slider buns until grill marks form and the buns are heated through, about 30 seconds.⁠

5. Stack one patty on the bottom of each bun. Top each slider with 1 slice of tomato, 1 slice of white onion, some arugula, and the top bun. Enjoy hot!⁠
