5-step Cheesecake Brownie Bats
These scary-good cheesecake brownies are perfect for baking with your little ghouls on Halloween! We make the base with Betty Crocker fudge brownie mix, then top it with an unfussy cheesecake layer your kids can dye, drizzle, and swirl like they’re brewing a yummy potion. Cut them into squares, or let your kids loose with cookie cutters shaped like bats, ghosts, pumpkins, and witches’ hats — the spookier the better! 👻

5-step Cheesecake Brownie Bats
Ingredients
Directions
1. Prepare 1 box Betty Crocker fudge brownie mix according to the package instructions, reserving ⅓ cup of batter. Pour the remaining batter into a 13x9” pan lined with parchment paper and smooth the top.
2. In a separate medium bowl, beat together 1 lb room-temperature cream cheese, ¼ cup sour cream, and ½ cup sugar until smooth. Then, beat in 1 large Gelson’s egg, ½ tsp vanilla extract, ¼ tsp salt, and yellow and red food coloring (optional) until combined.
3. Spread the cream cheese mixture over the brownie batter.
4. Mix the reserved ⅓ cup brownie batter with 1 Tbsp water. Drizzle the thinned batter over the cheesecake and swirl with a toothpick.
5. Bake the brownies in a 325° oven until the cheesecake sets, 27 to 30 minutes. Let cool completely, remove from the pan, and cut into desired shapes.
