Roasted Red Pepper Pesto
Serves: 1
Ingredients
1 container Gelsons finest roasted red peppers drained well
cup fresh cilantro leaves
3 olive oil
3 balasmic vinegar
1 small garlic clove chopped
dry mustard
ground coriander
Pinch of ground cinnamon
cup whole toasted almonds about 2 oz
Sea salt and fresh ground pepper to taste
Directions
Pure first 8 ingredients in a food processor until almost smooth.
Add nuts and process until finely chopped, but no ground. Season with salt and pepper.
Toss with pasta, vegetable or chicken.
