Winter Fruit Whipped Yogurt Parfait with Crunchy Topping

Winter doesn’t have to be dreary–not with the bright, vibrant flavors of California citrus, kiwi, and pomegranates. Here they’re layered with fluffy spoonfuls of whipped yogurt, textured with pistachios, and topped with pieces of crunchy granola. It’s a hearty breakfast, snack, or dessert that comes together in minutes!

Winter Fruit Whipped Yogurt Parfait with Crunchy Topping

Serves: 2

Prep Time: 10 Minutes

Ingredients

1 California blood orange, peeled and supremed
1 Ojai Pixie tangerine, peeled and separated into wedges
1 California kiwi, peeled and roughly chopped
2 TBSP fresh California pomegranate arils
¼ cup California pistachios, chopped
1 cup Real California Greek yogurt
¼ cup Real California whipping cream, chilled
2 tsp California honey, divided
½ cup crunchy granola
Flaky sea salt, to garnish

Directions

  1. Prepare the fruit and pistachios and set aside.
  2. In a chilled mixing bowl, combine the Greek yogurt, whipping cream, and 1 tsp honey.
  3. Use a hand mixer set to low or a large whisk to incorporate the ingredients, then increase speed and beat 2-3 minutes, until the mixture is silky and soft peaks start to form.
  4. Scoop a heaping dollop of the whipped yogurt into the bottom of two glasses or parfait cups.
  5. Layer in half of the blood orange, mandarin, kiwi chunks, pomegranate arils, and chopped pistachios, then cover with another dollop of the yogurt.
  6. Top with the remaining fruit and pistachios, then a drizzle of the remaining honey.
  7. Garnish with the nut bark and a light pinch of flaky sea salt, then dig in!
